Kale, Beet, and Goat Cheese Salad

If you have ever signed up for a CSA, are you incredibly sick of leafy greens by the first of July?

I like a good salad once in a while, but last week I practically threw the two heads of lettuce and giant stalks of kale into my fridge in utter disgust when I pulled them out of my box.

There are only so many salads I can eat in a week before it goes bad, people!

So lately if anyone is coming over, or I’m going over to someone else’s, I say, “Salad? Sound good? Great. Because that’s what I’m making and that’s what we’re eating.”

Last week my friend came over for some place card making (yep…wedding so so soon!), and she asked if she should bring some fixings for some lunch. And I immediately said no. There was enough kale in my fridge to feed an army, not to mention a mountain of beets. And with Chris out of town, I knew I’d need some help eating it. So I roasted the beets, went to the store and grabbed some goat cheese, washed and tossed some kale around, and voila! Healthiest lunch in town :)

Kale, Beet, and Goat Cheese Salad
Serves 6

Ingredients:

  • 1 bunch of kale, washed and torn from stems into pieces
  • 3 medium beets, roasted, cooled, and diced
  • 2 oz goat cheese, crumbled
  • juice of 1 lemon
  • 2 tbsp red wine vinegar
  • 2 tbsp olive oil
  • salt

Directions:

  1. Place the kale in a large bowl.
  2. In a small bowl or dish, whisk together the lemon juice, vinegar, and olive oil. Shake in a bit of salt.
  3. Pour the dressing over the salad and massage the kale until the dressing is well incorporated into each piece of kale. Then toss in the beets and goat cheese. Serve immediately.

My Two Cents: So the trick to eating all of these leafy greens without going bat shit crazy is to a.) make some damn good salads (like this one), b.) invite people over to help you eat it/bring it to gatherings, and/or c.) eat only greens and possibly turn into one.

On a side note, I love beets. I would rather get the amount of beets that I am leafy greens. I can eat beets with absolutely nothing on them. I could eat them first thing in the morning and not think it’s weird. I could eat them for dessert. I could just… yeah. Beets and I are tight. And add goat cheese into the mix?…well you know the rest.

So if you’re up to your ears in kale and/or beets, this salad will save you.
